Cowboy Caviar
This is one of our family’s all time most beloved recipes. Cowboy caviar is a sort of a dip made from black beans, hominy and black eyed peas, dressed up with lots of veggies and a zesty Italian dressing. It’s absolutely packed with protein and fiber, and all the beautiful vitamins from tomatoes, onions and peppers.
The easiest way to serve this is with tortilla chips, and I’ve got kiddos that will polish off a batch after school – which I love. But I also use this in wraps with chicken or beef, and it’s awesome on tacos as well. For that matter, it’s pretty good as a salad all on its own. I’ve taken this to a ton of parties, and without fail, it’s the first thing to disappear. It really is that good.

Ingredients
1 can black beans, drained and rinsed
1 can golden hominy, drained and rinsed
1 can black eyes peas, drained and rinsed
3 Roma tomatoes, diced
2 cloves garlic, minced
1 medium white onion, diced
1 bell pepper, diced
1 jalapeno, seeded, membranes removed and diced
3 green onions, green tops included, diced
1 ½ cups Italian dressing
½ cup chopped fresh cilantro (optional)
½ cup chopped fresh parsley (optional)
Kosher salt and black pepper to taste
Instructions
Combine all ingredients in a large bowl, mixing well to combine. Allow to sit in the refrigerator for at least an hour, and up to three to allow the flavors to marry. Serve with tortilla chips or tacos.
